On the big dating apps, premium is a bundle of the same few things. You get unlimited likes and a way to see who already liked you. You also get boosts that show you to more people, and more control over who you see. Tinder sells it as Plus, Gold and Platinum, Hinge as Hinge+ and HingeX, and Bumble as Boost, Premium and Premium+. Each step up adds more.
Tinder
Tinder Plus includes unlimited daily Likes and unlimited Rewinds. It also has Passport Mode, ad hiding and incognito. Rewind takes back a pass you made by accident.
Tinder Gold adds weekly Super Likes, a monthly Boost, and seeing who Likes You. Tinder Platinum adds Prioritized Likes on top of that.
Hinge
Hinge+ and HingeX include unlimited likes and unlimited Undo Skips. They also let you see all incoming likes at once and set advanced filtering preferences.
HingeX adds seeing compatible people sooner, an always-on boost so more daters see you, and Priority Likes.
Bumble
Bumble Boost includes unlimited likes, plus a weekly number of SuperSwipes and a weekly Spotlight. It also has Extend, Rematch and unlimited Backtrack.
Bumble Premium adds seeing who liked you, advanced filters, Incognito Mode and Travel Mode. Bumble Premium+ adds photo insights, fast-tracked likes and daily prioritization. It also gives you more weekly Notes, SuperSwipes and Spotlights.

Which parts matter for a man
Most of this list is about convenience. A few items change results.
Seeing who liked you is the clearest gain. Instead of guessing which women are interested, you can go through a list of women who already said yes. Your replies go further, because the hardest step, her interest, is already done.
Unlimited likes help only if likes were your limit. A boost helps if your problem is that too few women are shown your page.
Everything else is comfort: take-backs, travel mode, ad hiding. Nice to have, and it will not change who answers.
What a dating coach says about paying
a dating coach argues that men in the game community carry a strong bias against ever paying, and that it costs them. His view is that paying for a premium tier is probably worth it in most cases, provided it is not extreme, because apps are businesses and look after paying members.
He also says that on his understanding of how these sites work, a paying member is shown to more people and to more attractive people than a free one. Treat that as his read of the business, not as something an app promises. The apps do not publish how they rank you.
What premium cannot fix
No tier changes what a woman sees when your page appears. Your first photo, what you wrote and your first message are the same on every plan.
A man with a weak lead photo who buys a boost shows that photo to more women, and it fails faster. Fix the photos before you spend a cent. a dating coach's point about the first photo is that it decides most of the verdict, and a paid tier only multiplies it.
How to decide
Start free and see what the app gives you. If your problem is volume, with decent photos and few matches, a boost is the thing to test. If your problem is sorting through the likes you get, the see-who-liked-you feature is worth testing. If your problem is that nobody answers, spending changes nothing, and the fix is the page and the opener.
Pay for one month of one tier, note what changed, and cancel if nothing did.
