You had a drink arranged for Thursday. On Wednesday afternoon the phone went and Thursday stopped being yours. You sent the message, she said no problem, and then the thread went quiet and never came back.
That has happened enough times now that you have started not asking, which is the point where the apps stop producing anything at all.
Cancelling is not what kills it
This is worth getting right, because most men blame the wrong thing and then feel guilty about a job they are not going to quit.
Women cancel too. A cancellation with a real reason and an immediate alternative is close to harmless, and plenty of good first dates happen on the second attempt. She is not offended that your Thursday moved.
What kills it is what happens next. The cancellation lands, nobody restarts the conversation, and three days later reviving it means opening with an apology. By then she has a drink arranged with a man whose Thursday held.
The damage is the silence afterwards, not the cancellation.
The standard advice assumes a week you can see
Almost everything written about dating apps tells you to move fast and lock in a specific evening early. It is good advice for a man with a normal calendar.
On call, it is advice to write checks you cannot cash. Locking in Thursday four days out is a coin flip, and losing the flip costs you more than never naming the day. So you hedge. You keep it loose, you say something about later in the week, and loose is the exact register in which a conversation dies of nothing in particular.
Caught between those two failures, plenty of men on rotating or unpredictable schedules conclude they cannot really date until the job changes. The job does not change.
What actually works on an unpredictable schedule
Three things, and none of them can be done at three in the morning on a phone with eleven percent battery.
The first is keeping a thread warm without a date in it. Not a daily good morning routine, which reads as filler. A real exchange, a few times a week, that is clearly going somewhere, so that when a night opens up the ask is the next natural thing rather than a resurrection.
The second is short notice done properly. When Saturday unexpectedly frees up at lunchtime, there is a way to ask that does not read as a last resort, and it depends almost entirely on the thread having been warm an hour earlier. Asked from warm, tonight sounds spontaneous. Asked from cold, it is obviously a gap you are filling.
The third is running enough conversations at once that a free evening usually meets an available woman. One thread and a random night off almost never line up. Five threads and a random night off usually do.
All three are daily work, and daily is the specific thing your rota has taken away.
The part that has to be somebody's job that day
Read that list again and notice what it needs. Somebody in the accounts every day, answering at the speed a person answers. Somebody who knows which three exchanges are actually going somewhere and which two are politeness. Somebody watching for the moment a night opens so the ask goes out inside the hour.
That is not skill you are missing. You know how to talk to a woman. It is attention, at unpredictable hours, and attention is the one resource a job that pages you does not leave lying around.

Your schedule is the argument for it, not against it
Men on call assume a service will not work for them because their life is too unpredictable to organize around. It is worth turning that over.
A predictable life is the one you can run yourself. Ordinary hours, a free Thursday most weeks, and you do not need anybody. Unpredictable is the exact condition that defeats a man doing this alone, because the work has to continue through the days he cannot look at his phone, and those are the days that decide it.
The promise attached to it is narrow and plain. Your first date within a week, or we keep working. From there the target is 2-3 dates each week, asked for on the nights that actually turn out to be free.
